abstract | The present invention relates to a method for the production of a diary-free fermented desert, wherein the desert is produced based on a diary-free alternative for milk, and the method comprises the homogenisation, the thermisation and the fermentation of the diary-free alternative, wherein the thermisation is a two-step treatment, wherein, in a first step, the dairy-free alternative is heated to a temperature which is minimal 95°C, and in a second step, is cooled to a minimum temperature of 30°C. The present invention also relates to a diary-free, fermented desert based on a diary-free alternative for milk, wherein the desert is composed of the dairy-free alternative for at least 14% and wherein the pH is comprised between 4.1 and 4.8. |
