The present invention relates to a preparation for coloring and / or flavoring foods which comprises (i) an oil phase comprising one, two or more active ingredients selected from the group consisting of food colorings, coloring foods, flavorings and flavor foods, the oily phase being in the form of oil droplets, said oil droplets having a diameter of less than or equal to 50 μm, (ii) a surfactant system comprising the dry matter of one, two or more foods selected from the group consisting of fruits and vegetables and parts thereof and (iii) water where appropriate. The invention particularly relates to oil-in-water emulsions and their spray-dried products. The present invention further relates to various methods for making the preparations. |
