abstract The invention relates to fatty acid polyester derivatives of polyglycosides and formed from a polyol comprising between 2 and 10 hydroxy functions, the 2 hydroxy functions or at least 2 of said hydroxy functions being attached to the anomeric carbon of a reducing glucide which is identical or different for each hydroxy group and is selected from monosaccharides and disaccharides, in which at least one of the other hydroxies of said monosaccharide or said disaccharide is esterified by a fat derivative carrying at least one double bond, optionally from a vegetable or animal oil or from a mixture of vegetable oils, the double bond or at least one of the double bonds of said fat derivative being functionalised by a group selected from the epoxy, amino, alcohol and acid groups and the use thereof in particular in reaction formulations for the production of polymeric materials. <b/>
