abstract |
The present invention provides colorant compounds and its molecular structural formulas and methods of isolation of the, colorant compounds derived from a reaction of Genipa americana genipin and glycine. The novel compounds were obtained from multiple fractioning by chromatography of the reaction resulting material. The molecular structural formulas resulted from Ή nuclear magnetic resonance spectroscopy, J-Modulation, H-H Correlation Spectroscopy experiments, and other molecular structural tools analysis. |
