abstract | In a method for determining a characteristic value for the freshness and / or the loss of freshness of a food sample containing at least one first starting product and one second starting product, the first starting product is decomposed on the occurrence of a first loss of freshness and at least one first metabolite is formed. When a second loss of freshness occurs, the second starting product is decomposed and at least one second metabolite is formed. For the concentration of the first starting product, a first starting product concentration value and for the concentration of the first metabolite a first metabolite concentration value are measured. For the concentration of the second starting product a second starting product concentration value and for the second metabolite concentration a second metabolite concentration value is measured. The starting product concentration values and the metabolite concentration values are measured simultaneously. The freshness score of the food sample is determined as a function of the ratio of the first output product concentration value to the first metabolite concentration value and the ratio of the second output product concentration value to the second metabolite concentration value. |
