The invention provides a method of post mortem treatment of units of fish flesh, which method comprises injecting into said units from 50 to 250 mL/kg of an aqueous solution of a physiologically tolerable base and sodium chloride, the concentration of said base being 0.05 to 0.35N and that of sodium chloride being 5 to 30% by weight. |
