The invention relates to a crystallised maltitol powder having a maltitol content higher than 99.5 wt %, characterised by a volumetric particle size, as determined by laser grading, including less than 20 % of particles having a size lower than 200 µm, less than 6 % of particles having a size lower than 100 µm, less than 2 % of particles having a size lower than 40 µm, and a flow value lower than or equal to 10 seconds, an aerated density higher than 0.85 g/ml, a compacted density higher than 0.97 g/ml, and a compressibility lower than 17 %. The invention also relates to the use thereof particularly in the fields of pharmaceuticals and the food industry, in particular in the formulation of chocolates or table sweeteners. |
