abstract | A process is described for producing a spicy mixture based on buckwheat, said process comprising the following process steps: preparing hulled buckwheat grains and heating the buckwheat grains in a type of roasting to obtain preroasted buckwheat grains, adding edible oil to the preroasted buckwheat grains with continuation of the roasting in such a manner that the edible oil is added to the preroasted buckwheat grains in an amount such that the buckwheat grains are completely wetted by the edible oil on the surface and that the continuation of the roasting proceeds until the buckwheat grains acquire a gold-yellow coloration caused by the oil uptake and the roasting, addition of a solution containing a salt, sugar or at least one flavour to the oiled and roasted buckwheat grains in such a manner that the oiled and roasted buckwheat grains are wetted on the surface with the solution containing salt, sugar or flavour in the course of a sprayed application, and continuation of the roasting until the spicy mixture is obtained in the form of solvent-free, salt-, sugar- or aroma-containing roasted buckwheat grains. |
