abstract |
The invention relates to an emulsifier composition for emulsifying a fat-soluble dye in a foodstuff. It is envisaged that the emulsifier composition comprises at least one lecithin and at least one sugar ester of fatty acids and an emulsifier composition for the emulsion. The emulsion is characterized in that the average size of the oil droplets of the dispersed food coloring matter constituting the dispersed oil phase is 100 nm or less. |
