abstract |
A method of improving the flow properties and/or cold solubility of a milk powder and use of the modified powder in beverage distribution machine for delivering, in particular, cold beverages. The method comprises controlling glycation of proteins in the range of 10-35 % blocked lysine and lactose crystallisation between 5 and 50 %. |
