abstract |
It has been found that a reduced-calorie and low-sugar dairy product can be prepared that fits for purposes of weight management, of which the taste closely resembles that of a non-reduced-calorie dairy product (full sugar reference), especially in terms of pleasant taste effects such as fruit intensity and balanced flavour profile, and in the absence of unpleasant off-taste. This can be achieved by hydrolysis of at least a large part of the lactose present in the dairy product, and by adding a combination of an artificial sweetener and fructose to the dairy product. The resulting product is well-tasting and can contain 30 - 50% less calories than its full sugar equivalent. |
