abstract Provided is a method for manufacturingncrystalline isomaltulose from sucrose, comprising the stepsnof: 1) contacting an α-glucosyltransferase enzyme tonaqueous sucrose solution or slurry under the conditionnwherein the α-glucosyltransferase enzyme is active; innwhich said condition is maintained after the concentrationnof isomaltulose in the reaction mixture reaches the pointnat which crystals are formed, and 2) separating thenreaction mixture into crystalline isomaltulose andnremaining syrup. According to the present invention,nenzymatic conversion of sucrose and crystallization ofnisomaltulose are carried out simultaneously in a samenreaction vessel. In addition, the enzyme can be usednrepeatedly.
