abstract | Cheese coatings are provided comprising a copolymer with vinyl acetate and ethylene as the prevalent monomer constituents, which have significantly lower water vapour permeability as compared with the state of the art, thus allowing the production of cheese having a relatively high water content, whilst the quality of the cheese, in particular of the taste, is not adversely affected. Advantages of the present invention include improved texture of reduced fat cheese and the possibility to store cheese under conditions at lower relative humidity (i.e. having less risk of microbial growth on the exterior of the cheese) whilst keeping the moisture loss to an acceptable value. |
