In accordance with the invention, an industrialnprocess for producing shogaols useful in the fields of fornexample foods, flavor, pharmaceutical products, qui-pharmaceuticalnproducts and cosmetics can be provided. Theninvention relates to novel intermediates represented by thenfollowing general formula and a process for producingnshogaols from the intermediates. In accordance with theninvention, shogaols can readily be produced, of which massnproduction has been difficult because shogaols have beennproduced only by the extraction process from a naturalnginger. nIntermediates;n n(in the formula (1), R 1 represents hydrogen atom or methylngroup; R 2 represents optionally branched alkyl group withnone to 18 carbon atoms; R 3 and R 4 each independentlynrepresents hydrogen atom, a lower alkyl group or anprotective group of the phenolic hydroxyl group; Anrepresents an alkylene group with one to 4 carbon atoms;nand X represents benzenesulfonyl group or toluenesulfonylngroup.) |
