abstract For deacidifying wines, i.e. reducing the volatile acid compounds that are present as a solution in the wine, the present invention provides two successive process stages. In the first one of such stages, the solution to be processed (A) is separated into a first concentrate (B) and a first permeate (C), in which the latter comprises said compounds. In the second one of such stages, said first permeate (C) is in turn separated into a second concentrate (F), in which there are included the compounds that are responsible for said volatile acidity, and a second permeate (E) that comprises the solvent. Preferably, said first permeate (C) is at least partially neutralized with high-pH additives between said first and said second stage.
