This invention describes the protcction of meat products against Listerianmonocytogenes by treating casing with a bacteriocin, nisin, and the antioxidant erythorbatencontaining shirring solution, wherein the meat product incorporates a bacteriostatic agent ofnpotassium or sodium salts of diacetic acid or lactic acid and wherein the particle size of nisinnis much smaller than that found commercially. |
