abstract |
A hydrolyzed protein which can be used as seasonings or the like is produced by heating and retaining an aqueous dispersion of a protein-containing starting material under an acidic condition with a plate-type heat exchanger using a liquid as a heat medium to make the aqueous dispersion substantially aseptic and then subjecting the resulting aqueous dispersion with an action of a proteolytic enzyme. According to this process, an aqueous dispersion of a protein-containing starting material, especially a dispersion having a high concentration can be made substantially aseptic easily in the production of a hydrolyzed protein with an enzyme on an industrial scale. Consequently, it is possible to improve an equipment productivity and a product quality and to widen the use range of a product. |
