abstract Extracting gases produced by fermentable substances and collecting the gases in a reservoir, using a relative pressure function to regulate the process, obtained from a metrological forecast, especially of barometric pressure, and lowering the pressure when a reduction in atmospheric pressure is forecast, is new. The gas produced by the procedure is consumed in a burner, with admitted air measured at the burner and the flow of extracted gas regulated accordingly. The extracted gas flow is also regulated according to the content of volatile organic compounds measured in the peripheral zone. An Independent claim is also included for the apparatus used for the method, comprising: (a) gas extraction reservoir; (b) a pressure gauge (17) incorporating a barometric pressure forecaster; (c) an extracted gas regulator (19) with a control valve; and (d) a burner (18) linked to the extracted gas reservoir to consume the gas, equipped with an ignition safety unit.
