A novel chondroitin sulfate which can be produced moreneconomically in a large amount and is expected as being usefulnfor various purposes and processes for producing the same. Namely,na novel chondroitin sulfate which has an intermediate structurenbetween the conventionally known whale-origin chondroitinnsulfate and shark-origin chondroitin sulfate and is expectednas useful for various purposes in the fields of drugs, cosmetics,nfood additives, etc. Aprocess for producing the above-describednchondroitin sulfate comprises grinding salmon nasal cartilagenat a low temperature, defatting the ground matter, then treatingnit with an alkali and pronase, centrifuging the thus obtainednliquid digested matter and then precipitating it from ethanol;nand another process wherein the precipitate thus obtained isnfurther treated with a cation exchange resin. |
