The methods comprise the stepnof treating a foodstuff by incubating the same with a cell free extract in a effectivenamount to enable changes in the foodstuff: (a)reduce the level of cholesterol; and (b)nincrease the level of at least one desaturated cholesterol derivative: Δ7- dehydrocholesterol,nΔ22 dehydrocholesterol and/or Δ7,22 bisdehydrocholesterol. n The invention also relates to methods for recovering cholesterol desaturasesnactivities from ciliates, including Tetrahymena , and their use in a production of Δ7ndehydrosterol, Δ22 dehydrosterol and Δ7,22 bis dehydrosterol from several sterolnsources as cholesterol.
