abstract | A cell free extract from a ciliate microorganism, including protozoo Tetrahymena ,nwherein the extract comprises a homogenate a microsomal fraction, a desaturaseenrichednfraction or a mixture thereof and, more particularly the invention providesnsubstantially pure enzymes: Δ7 cholesterol desaturases and Δ22 cholesterol desaturasenenzymes. n The present invention provides methods for decreasing the cholesterol content of anfoodstuff of animal origin, such as a dairy product. The methods comprise the stepnof treating a foodstuff by incubating the same with a cell free extract in a effectivenamount to enable changes in the foodstuff: (a)reduce the level of cholesterol; and (b)nincrease the level of at least one desaturated cholesterol derivative: Δ7- dehydrocholesterol,nΔ22 dehydrocholesterol and/or Δ7,22 bisdehydrocholesterol. n The invention also relates to methods for recovering cholesterol desaturasesnactivities from ciliates, including Tetrahymena , and their use in a production of Δ7ndehydrosterol, Δ22 dehydrosterol and Δ7,22 bis dehydrosterol from several sterolnsources as cholesterol. |
