abstract The present invention relates to a method of secretory production ofntransglutaminase by a microorganism. n The object of the present invention is to provide a method of produce a largenamount of transglutaminase by causing Streptomyces bacteria to produce andnsecrete a large amount of transglutaminase. n The present invention is a method of producing a large amount ofntransglutaminase, comprising culturing a Streptomyces bacterium harboring annexpression plasmid containing a transglutaminase gene from actynomycetes andnits native (naturally occurring) promoter, causing the bacterium to secretenprotransglutaminase during the initial phase to the middle phase of culturing, andnobtaining mature transglutaminase (active form) by cleaving and removing thenpro9-structure, for example, with proteases derived from Streptomyces.
