abstract The invention relates to mutants of lactic bacteria such as <i>L. lactis</i> or <i>S. thermophilus</i> which can overexpress one or more peptidases, characterised in that at least one of the negative regulation factors of at least one of the peptidase genes of said bacteria is inactivated, said negative regulation factor being selected from a group comprising the gene <i>codY</i>, the genes of the operon <i>lev</i>, and a gene coding for a protein that is homologous with a beta -glucosidase.
