The present invention relates to the field of chemistry and more particularly to that ofnextraction of natural substances.n n n More specifically, it relates to a new process for extracting isoflavones fromnalready enriched vegetable preparations which make it possible to obtain, without denaturing or modificationnchemical, concentrated extracts very rich in isoflavones in O-malonylated form innwhich the genistein / daidzein ratio is practically identical to that present in naturenand in which the content of little or no active isoflavones is very low.n n n Use of these concentrated extracts in cosmetic formulations, in solid or fluid food preparations, or in forms for pharmaceutical use. |
