abstract The present invention relates to the enzymatic conversion of starch. Starch isnenzymatically hydrolysed to a product with a desired and stable viscosity, this isnachieved by ending the enzymatic activity by heating the product in the presence ofnsodium perborate. More specifically the invention relates to a dry compositionncomprising starch and sodium perborate. The addition of the perborate to the starchnpowder makes the subsequent enzymatic conversion of starch with alpha-amylase andnthe termination of the reaction much easier. The conversion then results in a productnhaving a stable end viscosity. The product is preferably used in paper and corrugatingnindustries, specifically in paper surface sizing and/or coating.
