abstract The invention relates to a method for the reesterification of fat and/or oil of biological origin by means of alcoholysis. The inventive method comprises the following steps: providing the fat and/or oil of biological origin destined for reesterification in a receptacle, and carrying out the alcoholysis by adding an alkanol, especially a monovalent alkanol, and a catalyst to the fat and/or oil provided. The inventive method utilizes a catalyst that is a metal salt of an amino acid or an amino acid derivative that is insoluble in alkanols to overcome the disadvantages of conventional reesterification methods.
