abstract A cutter blade (16) for a rotary cutting wheel (10) of a food slicing machine and a method for cutting food products into uniform thickness slices using the cutter blade wherein the cutter blade includes leading and trailing edges (20, 22), a circular fastener aperture (18) at each end area of the blade having centers aligned in a common plane of tension (P) extending longitudinally along and transversely of the blade and wherein the straight leading and trailing edge portions of each blade are of unequal lengths and extend parallel with the common plane of tension. A sharpened cutting edge is formed on the leading edge of the blade and the straight leading edge of the blade is longer than the maximum distance between the aperture diameters and the trailing edge of the blade is shorter than the minimum distance between aperture diameters. When installed on a rotary cutting wheel and used to slice food products, the blades produce a first velocity (V1) of advancement of unsliced food products across the cutting plane for each revolution of the cutting wheel and for a given slice thickness and the products are fed into the cutting plane of the blades at a second velocity (V2) that corresponds closely to the first velocity.
