abstract In the separation and purification of N-[N-(3,3-dimethylbutyl)-L-α-aspartyl]-L-phenylalaninenmethyl esternproduced in the reductive alkylation of aspartame (APM) withn3,3-dimethylbutylaldehyde, the APM used in the startingnmaterial for the alkylation, which is difficult to be separatednby recrystallization only from the crude crystals of thenreaction product, can be separated and removed by extractionnor solution thereof with the specified organic solvent fromnthe concentrated reaction solution of the reductive alkylationnor from the crude crystals of the product therefrom, and furthernN,N-di(3,3-dimethylbutyl)-APM as the by-product can benseparated and removed by means for separation and purification,nsuch as crystallization, chromatography, extraction,ntreatment with the activated charcoal, etc. As a result,nN-[N-(3,3-dimethylbutyl)-L-α-aspartyl]-L-phenylalaninenmethyl ester which is a sweetener having a high degree ofnsweetness can be purified efficiently, and also the APMnderivative in a high purity is possibly produced industrially.
