The present invention provides an immobilized enzyme fornlipolysis, which sufficiently exhibits its activity, prevents thenenzyme from being left or inactivated, and can reduce the amountnof the enzyme used for lipolysis. Further, the present inventionnprovides an immobilized enzyme for esterification, whichnsufficiently exhibits its activity and prevents the enzyme fromnbeing left or inactivated, thus promoting the esterificationnreaction. That is, the present invention comprises immobilizingnan enzyme by adsorption onto a porous, anion-exchange resin as annimmobilizing carrier and treating it with fats and oils to preparenan immobilized enzyme for lipolysis. That is, the present inventionncomprises immobilizing a lipolytic enzyme by adsorption onto annimmobilizing carrier, and without drying, directly bringing it intoncontact with its reaction substrate, thereby enabling thenesterification reaction. |
