abstract In the present invention, hydrolysis of fats and oils isncontinuously conducted by simple facilities in easy operation whilenattaining a sufficient reaction rate without a loss in an enzyme.nFurther, the present invention also provides a process fornhydrolyzing fats and oils, which is efficient and stable for anprolonged period of time without the reduction of enzyme activityncaused by an increase in the number of treatments. That is, thenpresent invention provides a process for hydrolyzing fats and oils,nwhich comprises using an enzyme column (reaction column) using annimmobilized enzyme and a substrate-feeding chamber also serving asnan oil-water separating chamber, circulating a reaction solutionnbetween the enzyme column and the substrate-feeding chamber andnsimultaneously feeding to the enzyme column an oil phase substratenand an aqueous phase substrate removed, separately from each other,nfrom the substrate-feeding chamber without previously mixing them.nFurther, the present invention also provides a process fornhydrolyzing fats and oils, which comprises feeding a solution ofnan oil phase substrate from a substrate-feeding chamber to an enzymencolumn packed with enzyme-immobilized carriers and bringing thenreaction solution having passed through said enzyme column intoncontact with an aqueous phase substrate in an oil-water mixingnchamber, followed by separating oils from water.
