abstract The invention relates to a novel class of xylanase-inhibitingnproteins, capable of forming a stable complex with endo-xylanases,nthereby inactivating the latter. The inhibitors can be applied asnstabilising agents to xylan-degrading enzymes used for industrialnprocesses, e.g for food, feed and non-food applications as paper andnpulp technology. Furthermore, the invention relates to strainnimprovement of industrial xylanase-producing organisms as well asnto the selection of cereals, in particular wheat, in which xylanase-inhibitingnproteins are absent. Finally the invention relates tonquantification and control of xylanase inhibitors for assuringneffective and controlled dosing of xylanases applied for variousnindustrial processes.
