The invention provides a native gellan gum-containingncomposition, and particularly based on thenmultifunctionality thereof, provides freeze/thaw-resistantngel compositions and dehydrated gels and jellies availablentherefrom, rice cake-like gels and rice cake substitutes,ncopy foods, cold retention compositions and cooling agents.nThe invention further provides the use of the abovencomposition as additives for the expression of uniquenfunctions, for example a dispersion stabilizer, an additivenfor thickened compositions, a heat resistance-impartingnagent, a syneresis inhibitor, a foam stabilizer, and a foodnpalatability/body-improving agent. |
