A preservative for food and drink containing a water-soluble hemicellulose as the active ingredient; another preservative therefor containing (A) a water-soluble hemicellulose and (B) one or more members selected from the group consisting of ethanol, glycine, glucono-δ-lactone, sorbic acid, p-hydroxybenzoic acid, benzoic acid, dehydroacetic acid, hypochlorous acid and salts thereof, organic acids such as acetic acid, fumaric acid, adipic acid, propionic acid and sorbic acid, and salts thereof, lower fatty acid esters, sugar esters, polylysine, protamine, lysozyme, Japanese mustard seed extract, green mustard extract, chlorinated lime, chitosan and phytic acid; and a method for preservation against decay by applying such a preservative to objective products such as food and drink. |
