abstract |
The present invention relates to antimicrobial agents for foods manifestingnbacteriostatic effect against a wide range of microorganisms and having excellentnsafety. The agents are polyglycerin fatty esters wherein the content of monoesters isnnot less than 50 wt%. The fatty acid of the polyglycerin fatty ester is preferably onenor a mixture of two or more of caprylic acid, capric acid, lauric acid and myristicnacid. The polyglycerin portion of the polyglycerin fatty ester is preferably a di, tri,ntetra or penta-glycerin. |
