The invention relates to a method for determining the presence of pectins in an aqueous solution, characterized in that: a) a sample of said aqueous solution is mixed with acetone in a volume ratio ranging from 1:10 to 10: 1, b) the number of phases of the mixture obtained is then determined. A specific pectin dye can be added to the mixture in order to facilitate the interpretation of the result. The method according to the invention is more particularly intended for determining the presence of pectins in fruit juices, grape must and other edible liquids, before or after treatment with pectinases. n n n It can also be applied to the screening of micro-organisms with pectolytic activity. |
