Disclosed are novel branched cyclodextrins having any of an N-acetylglucosaminylngroup, a glucosaminyl group, an N-acetylgalactosaminylngroup and a galactosaminyl group bonded to the hydroxyl group ofnthe cyclodextrin ring by β-bonding therebetween, and their salts. Thennovel branched cyclodextrins are produced by reacting a solutionncontaining a cyclodextrin and an N-acetylglucosamine or N-acetylgalactosaminenwith an N-acetylhexosaminidase, and optionallyndeacetylating the resulting product. |
