abstract The present invention is directed to a method fornproducing a microcapsule flavor delivery system. In thenmethod, a mixture of a flavoring material selected fromnthe group consisting of an oil soluble flavor dissolvednin an oil, a water soluble flavor or a combination of thentwo, and a protein solution is provided. The mixture isnsubjected to low shear mixing to provide an o/w pre-emulsionnor a w/o/w multiple emulsion. The pre-emulsionnor multiple emulsion is subjected to high shear mixing ornsonication to provide either an o/w emulsion having ancoating of protein around the oil droplets or a w/o/wnmultiple emulsion having a coating of protein around thenw/o droplets, respectively. The microcapsule flavorndelivery system is incorporated into a food product tonimprove the flavor perception.
