A process for producing D-malic acid selectively withoutnproducing a by-product L-malic acid by using inexpensivenmaleic acid as a starting material is provided in which anculture of a microorganism belonging to the genus Erwinia,nMycoplana, Sporosarcina, Vibrio, Geotrichum or Torulasporanand having the ability to produce D-malic acid from maleicnacid, or the microorganism itself separated from the culture,nor a treated microorganism, is allowed to act on maleic acidnin order to form D-malic acid. |
