A brassica vegetable tablet containing at least 50nµg of sulphoraphane and a maximum of 50 µg ofnsulphoraphane-nitrile. The product is made byninactivating endogenous myrosinase enzyme in a brassicanvegetable and thereafter blending the vegetable withnexogenous myrosinase enzyme. The preferred process mayninclude steam blanching as the method of inactivating thenendogenous myrosinase enzyme. The preferred process maynalso include horseradish root as the source of endogenousnmyrosinase enzyme. |
