abstract Meat that is mechanically separated in a separator is mixed with ice and brine in order to recover valuable isolated myofibril proteins and fat. Bone particles and tendons with meat fragments are separated by a solid bowl screw-type centrifuge and a by-product is produced therefrom. Undesirable elements such as metals, dyes and bone marrow parts are largely removed from the product by this extraction process and by using a self-emptying separator.
