A process for the production of fat and cholesterol-reduced powdery egg-based products with a high content of phospholipids by extraction with compressed gases is described, wherein the powdery starting material with a solvent mixture consisting of propane and CO₂ in a mixing ratio between 95/5 and 5 / 95 wt .-% treated at a pressure <300 bar and a temperature <70 ° C. In this way, the fats and cholesterol derivatives in the egg products are drastically reduced without removing large amounts of the important phospholipids (and in particular lecithin). |
