abstract The invention concerns a device for determining the optimum individual-nut and bed-roasting conditions for oilseed. The device has a roasting zone (13) in which are located thermocouple elements (15) which can make operative contact with at least one nut (41) and measure the internal temperature of the nut (41) at at least two points spaced a certain distance apart on the surface of the nut, the thermocouple elements being connected to a data-acquisition unit.
