This invention relates to processes for the production of trehalose using sucrose as a sole raw material. The characteristic feature of the present invention is a production of trehalose by a reaction of sucrose, sucrose phosphorylase, glucose isomerase and trehalose phosphorylase in the presence of an inorganic phosphoric acid and/or a salt thereof followed by isolation of trehalose. |
