abstract It is advantageous to incorporate mesomorphic phases of edible surfactants in meat products so as to give a structure to them, to make them succulent or to replace fat. The mesomorphic phases are preferably in the form of loose phases and comprise discrete zones of mesomorphic phase having a particle size between 1 mum and 1000 mum. Ideally at least 5% by volume of the product is in the form of a mesomorphic phase.
