A syrup composition that has a sufficiently low viscosity so that it can be poured or pumped, yet upon contact with a calcium-containing confection its viscosity increases, comprises:n a. an amount of at least one sweetener contributing from about 25 to about 60 percent sugar solids, in water; b. an amount of at least one sequestrant sufficient to complex substantially all the hardness present in the syrup wherein the sequestrant is a combination of a first type and a second type, the first type being optional and selected from sodium citrate, potassium citrate, and mixtures thereof, the second type being selected from phosphate, polyphosphate, and carbonate compounds; and c. an amount of at least one calcium reactive gum sufficient to thicken the syrup upon contact with the calcium-containing confection. |
