The process according to the invention for protecting food proteins of plant origin from their degradation in the rumen of ruminants consists in treating the proteins of plant origin with a mixture of oxidising catalysts, based on Cu, Fe, Mn, Co, Cr and/or Ni salts, and in the presence of an alkaline-earth metal hydroxide or oxide, and in then conditioning (packaging) the product thus obtained. |
