abstract Process for the destruction of microorganisms and enzymes by the combined application of heat and ultrasound under pressure (MTS process) under controlled conditions of pressure, time, temperature, frequency and amplitude of sonication. The application of ultrasonic pressure combined with heat treatment synergistically generates the destructive effect on microorganisms and enzymes, thereby reducing the time and / or temperature of treatment. The rate of destruction of microorganisms and enzymes subjected to Mano-Thermo-Sonication follows first-rate reaction kinetics, which makes it possible to calculate the sterilization or hygiene treatments to be applied to obtain a predetermined effect. Once the conditions of flow speed, temperature, pressure and sonication intensity in the Mano-Thermo-Sonication chamber have been calculated beforehand, the product to be treated is pulsed through said chamber.
