abstract |
Low-cariogenic hydrogenated saccharide composition usable as sweetening composition or as a texture agent in food products and in certain pharmaceutical or veterinary products. This composition is characterised in that it has a hydrogenated monosaccharide content of 0.1 to 80 %, a hydrogenated disaccharide content of 0.1 to 96 %, a hydrogenated mono- and disaccharide content of 11 to 96 %, a content of 1 to 40 % of polysaccharides which cannot be hydrolysed by amyloglucosidase, the remainder to 100 % consisting of hydrogenated oligosaccharides or polysaccharides. |
