abstract |
Unsaturated or poorly saturated frying oil giving food the particular flavor of animal fats. This oil is obtained by a process of esterification of glycerin with the unsaturated fraction of animal fat and then deodorization or refining of the triglyceride thus obtained. The unsaturated fraction of animal fat contains minor fatty acids which give off this aroma when the oil is heated. Usually the oil contains less than 5 mg of cholesterol / 100 g. |
