abstract |
The triglyceride in which all three fatty acids are C20 + polyunsaturated fatty acids (with at least three double bonds) is prepared by esterification of glycerol with a free polyunsaturated fatty acid or its C1-4 lower alkyl ester in the presence of a lipase. The production of triglyceride is increased and the amount of mono- and diglyceride reduced by removing water or lower alcohol formed during the reaction, using a lipase at non-specific positions, and / or using a lipase immobilized by adsorption on a macropore adsorbent resin of the acrylic type, in particulate form. |
