abstract Process for total or partial dehydration of plant products, more particularly leafy products, dehydration device and corresponding product. The method according to the invention is remarkable in that it consists of several stages: placing the enclosure (1) in which the products to be dehydrated are placed under vacuum, and the adsorption device (2) to a partial air pressure in said enclosure (1), between 1 and 2 mbar, rise in total pressure of the enclosure (1) between 7 and 200 mbar by introduction of a heat transfer gas, maintenance of the desired pressure, stopping operation, bringing the enclosure (1) and the adsorption device (2) to atmospheric pressure.
